Peter Lloyd, director of Sticky Mango, presents The Biscuit’s dish of the season, an Indonesian dish called Ikan (meaning to wrap in a banana leaf) Pepes (meaning fish).

Lloyd says: “During my unforgettable food tour of Bali, I stumbled upon a hidden culinary gem that left an indelible mark on my taste buds and repertoire, Pepes Ikan. It was a serendipitous discovery in the middle of Bali’s enchanting landscape and culture. 

“As I ventured through bustling markets and quiet rice paddies, the rich tapestry of Bali’s sights and smells overwhelmed my senses. The vivid hues of traditional sarongs and the fragrant incense wafting from temples created a captivating backdrop. 

“Amid this kaleidoscope, I found myself at a local warung (eatery) where Pepes Ikan awaited. The first bite transported me to a world of flavours. 

“This Balinese dish – made by wrapping marinated fish in banana leaves and grilling it to perfection – tantalised my taste buds with its blend of lemongrass, coconut and aromatic spices. 

“My discovery of Pepes Ikan became a symbol of my journey, representing the connection between the flavours, smells, scenes and the people of Bali, leaving me with cherished memories of a magical food tour.”
